For years I've been battling some extra poundage on
the typical rollercoaster ride. Being a parent in today's fast
pace-fast food society can be a great challenge. Adult and
childhood obesity are now at near epidemic levels. As parents,
it is our responsibility to fight back for the sake of our
kids.
With a practical and realistic approach, you can feed your family delicious foods without subjecting them to so many fast food alternatives. Saving money and time is an added bonus!
Bottom line, I enjoy food--- BUT--- I value my health and

foods that you and your family like, with a few painless modifications. Below is a kid-favorite recipe that Cate has shared with us:
Cate's Frito Chicken
===============
6 boneless chicken breasts ( I trim any visible fat and cut into strips)
2 cans cream of chicken soup (I choose the lower sodium version)
1 envelope taco seasoning ( I choose one without MSG or partially hydrogenated)
2 cups shredded cheeses (fiesta or Mexican mixes work great), separated
2 cups crushed Fritos, separated
Preheat oven to 375 degrees. Place boneless breasts in lightly sprayed 13x9 baking dish. Mix soup, seasoning and 1 cup cheese.
Spread over chicken. Bake uncovered for 45 minutes. Top with remaining cheese and crushed Fritos, then bake another 5 minutes. Remove and serve! Tastes great with mixed greens and corn on the cob. Don't forget your ice water or unsweetened tea!
For me personally, I can testify that her plan does in fact
work. This is the FIRST year that I haven't gained A POUND
over the
holidays and have planned meals easily using the
foods and ingredients that I like. I owe it in part to Real
