Balsamic-n- Cheese Tomatoes
The Superbowl is right around the corner! For some, it may be just another day and for others it's a great excuse to gather with friends and family.
I'm personally going to try and add in a few more healthy options this year to go along with the traditional menu! If you'd like an easy and delicious option try this:
Balsamic -n-Cheese Tomatoes:
-1 pint of grape tomatoes
-a handful of fresh basil ( my sis-n-law cheated using fresh baby spinach)
-fresh or packaged mozzarella cheese
-balsamic dressing
-toothpicks
Slice the tomatoes in half lengthwise; cut or tear the basil
into a size the approximate diameter of the cut tomatoes;
Slice mozzarella into small 1 inch slices.
Layer the following:
Half of a tomato, slice of cheese, piece of basil topped with the
other half of the tomato. Hold together with a toothpick. Arrange
on a platter and drizzle with balsamic dressing just before serving.

Stop Dieting! Start Eating!
No, I'm not kidding. I've wasted so much stinking money on disgusting meals
delivered to my door in hopes that I'd shed some weight. I've wasted too much time
on temporarily useful programs that I figured that this concept might actually work.

Straight talk from author, Cate Brizzell (mom of 3), gives her
Cate was kind enough to share one of her recipes that are included in her new recipe book:
CATE's SAVORY BEEF STEW
"I took a basic crock-pot beef stew recipe and made it my own. Great to eat on TV trays in front of a crackling fire and a good movie on a cold night. "

1 package beef stew meat or cut-up chuck roast
1 bag frozen sliced carrots
3-4 potatoes, peeled and cut into 1-inch cubes
2 cans cream of mushroom soup
1/2 tbsp. Worcestershire sauce
1 tsp. black pepper
1 bay leaf
Add veggies to bottom of slow cooker. Arrange meat on top., then cover with soup and Worcestershire sauce. Add bay leaf with one hour cook time remaining. Cook on Low 8-10 hours or High 4-5 hours. Remove bay leaf and serve. Serves 4-5.
There is nothing in it for me. I just admire Cate's no nonsense approach to real life. Her method can easily be intregrated into
eevry family's home.
You really have nothing to lose...except weight of course.

Organizing Tip of the Month
It's NEVER too late to get organized. Ask yourself what is it that really bothers you the most and start attacking it 10 minutes at a time.
Recently for me, it was my POTS-n-PANS cabinet.
In a fury,(ha-ha) I emptied the entire cabinet out on the kitchen floor.
-What I never use any more I tossed or gave away-
-What I rarely used was relocated to a designated shelf in the basement.
-What NOW occupies the space are the pots and pans that we use on a regular
basis.
Make a decision to clear the cobwebs from an everyday eyesore. It'll make you smile :)!

Did You Know That ~90% of Sexual Assault/Abuse Victims KNEW Their Offender?
Through a very painful experience that our family has endured, my sister and I have decided to help turn a negative into a positive. I've always believed that good things can come out of bad experiences if only we press through. What doesn't kill us makes us stronger, right?
Perpetrators: 59% within the family
37% acquaintance of victim
4% stranger
THAT statistic from the National Incident-Based Reporting System, brought me to my knees.
This past November, we took an intensive and deeply moving course offered through
R.A.D. Kids, which has equipped us to help empower children to resist aggression defensively.
Not only does it cover such topics as sexual abuse, abduction, and bullying, but it also includes several safety issues which affect children in the 21 century, some of which include gun violence, drugs and internet safety.
Currently, R.A.D
Kids.org offer in school and out of school programs (girl scouts, homeschooling groups etc..) to teach kids how to resist aggression defensively.
Their trained volunteers have taught thousands of kids nationwide and the testimonials keep rolling in. Lives have been saved and kids have become empowered.
RAD Kids is a not-for-profit organization and the costs to have a program are minimal.
All I can tell you (from the bottom of my heart) is that this organization and its volunteers are a much needed God-send in this dark world. I simply cannot say enough.
